Quesadilla can be described as a heated tortilla with melted cheese inside. But in addition to cheese, you can add practically anything like mashed potato, beans, and many more add-on in a quesadilla.
My best choices are mushrooms, brussels sprout, olives, tomatoes, and onions. Sometimes I saute these ingredients first, but it is a matter of taste.
Traditionally, Mexican quesadillas have been made up of corn tortillas, not wheat flour or other flour tortillas, and a slice of melty, creamy white cheese.
I like to get the flour tortillas lightly toasted because it improves the flavor.
Quesadilla Recipe

- Black olives, sliced
- Fresh tomatoes,
- Diced chicken/beef pieces
- Avocado
- Lettuce
- Apple cider vinegar
- Salt
Steps:
1. Heat the tortillas until air pockets form: Heat a large skillet on medium to low heat and add a small amount of butter or oil.
Then, Take one large flour tortilla and place it over the pan. Then Flip the tortilla over a few times, 10 seconds between flips check for air pockets. Air pockets may begin to form within the tortilla itself, and color will be slightly changed.
2. The second step starts with adding cheese and other ingredients: When pockets of air began to form, take a handful of grated cheese, then sprinkle over the top of the tortilla, and make sure that the cheese does not land on the pan itself.
Then add additional items you can choose - green onion, sliced mushrooms, olives, tomatoes, any leafy vegetables, etc.
If you would like a fusion in your quesadilla to be a chicken or beef quesadilla, add some diced cooked chicken or beef.
Please don’t make it too thick with added stuff.
3. Then lower the heat to lowest and cover the pan. The pan should be hot enough to have plenty of residual heat to melt the cheese and turn it brown the tortilla.
If the quesadilla begins to smoke or smell smoky too much, instantly remove it from the heat.
Look for the cheese if cheese melted, you are done.
4. Then check for cheese is sufficiently melted. Use a spatula or food turner to lift one side of the quesadilla and flip over the other hand, as if you were flipping an omelet.
The tortilla should now be turned in to brown slightly.
5. Finally, Remove quesadilla from pan and cut into wedges.
